cupcakes galore


i'd be lost without my morning cup of coffee. the inspirational mug makes my day that much better.
oh and i take it black now. i feel like a true grown up.



check out this awesome snack i had yesterday. its a protein cupcake. no added sugar. hardly any carbs. pure amazing-ness in a cup. and kept me full for like 5 hours (i ate it right after lunch)

recipe came from lauren over at biochemista.com

Vanilla Protein Cupcake
serves 1

1 scoop vanilla protein powder
1 egg white
1/2 t vanilla extract
baking powder, pinch
stevia packet
sea salt, tiny pinch
water, to moisten (hardly any!)

microwave 1 minute and 30 seconds. but the cake will expand very quickly so stop the microwave in 30 second increments otherwise you will have a mess.
lesson learned.
my "frosting" topping was plain nonfat greek yogurt sweetened with stevia and sprinkled with cinnamon.
the nutritional stats on this baby (without the "frosting) were 120 cals, 8.5g carbs, 4g fiber, and 19g protein. NICE.

yesterdays work-out was awesome. besides the fact that i thought i pulled my quad because it hurt to walk. a bad hurt, not a good "i must have worked hard because im so sore" hurt. but i did some hot yoga, stretched it out and i feel much much better now.

speaking of hot yoga.
i love it.
and im going again this morning. in an hour.
i better hydrate up because i almost passed out last night.


i should probably start doing homework again.
i tried reading last night, i really did.
but 20 minutes in...my eyes shut.
whoops.
and i should probably stop watching so much gossip girl.
but i love chuck bass.
its a problem.

i made a healthy cupcake and then made you drool with photos of sugary sweet ones.
yeah, well sometimes in life you deserve a treat.
and so tonight i am making cupcakes with my friend nikki.
ill probably take some in to work. so that people who just spent an hour working out at the gym i work at can totally ruin it with one of these cupcakes.
okay..i probably shouldn't do that.
