i love it. it didn't hurt at all either, surprisingly!
im finally feeling like myself today. i have been sick with a terrible head cold for the past 4 days. so that equaled lots of soup, vitamin c, sleep, and no exercise. i rested instead.
but i decided to crank it up a notch today and go back to my usual mondays with 3.5 hours in the gym. t-n-t, power yoga, 20 min treadmill, bodyattack. i think my physical activity today kicked my cold's butt.
my eats:
i decided to change up my oats a little bit this morning and had overnight oats! last night i put these together using a recipe from the edible perspective.
Overnight Pumpkin Oats:
- 1/3c oats
- 1/3c pumpkin (these turned into normal overnight oats because my pumpkin was moldy!)
- 1/3c plain SF greek yogurt (i ran out of greek so i just used nonfat plain)
- 1/3c unswt. vanilla almond milk
- 1 small bananer
- 1/2t cinnamon
- few shakes of nutmeg + ginger
- vanilla extract splash
- i added 1/2 scoop of chia seeds as well
- i also added 2 organic figs
i put the dry ingredients together first
this morning i added more cinnamon, sugar free maple syrup, & 1 tbsp of chopped walnuts
for lunch today i decided to eat swiss chard. i've never had swiss chard and it looks so pretty.
i found a recipe that used eggs and after working out for 3.5 hours, i needed some protein.
here is where i got the recipe.
Swiss chard scramble
1 Tbsp olive oil
1 small onion, chopped
2 garlic cloves, minced
1/4 tsp red pepper flakes
1 bunch chard, leaves and stems chopped separately
4 eggs
1 tsp turmeric
salt and pepper to taste
Heat oil over medium heat in a large skillet. Saute onions until tender, and then add garlic and red pepper flakes and cook for another minute. Add chard stems and let cook until tender (about 5 min). Then stir in chard leaves, cover skillet, and let cook until chard is wilted (about 3 min). While chard is cooking, whisk together eggs, turmeric, and salt and pepper. Pour eggs into the skillet and stir with the chard until eggs are cooked (about 4 min). Serves 2-3.
i cut everything in half to make it serve only one! except i did end up using a bunch of chard... i needed to get rid of it. and lettuce doesn't have many calories :)
well....off to studying now. joy.
